Tuvar dal is also known as yellow split pigeon peas. These lentils are widely used in Gujarati cooking – it is the choice of lentil for many dal dishes.

 When cooked, toor daal has a thick viscid, brawny consistency. Toor dal takes a little longer to cook than mung dal.
